There is certainly no accounting for taste as far as I am concerned, because recently I tasted a salad and I immediately had a very bad taste in my mouth. It turned out that there was far too much fresh coriander in it. Hours later I still had a soapy taste in my mouth and that was not very pleasant. Now more people suffer from that, so I thought I would recreate the salad myself and add some nice fresh parsley and mint! And that is how this Couscous salad with hummus was born. And I can tell you that I liked it a lot better than the other one. You can buy the salad I was talking about at the Appie in the fresh produce section, but making it yourself is not that complicated and it will be on the table within 20 minutes. Serve with a nice piece of meat or fish and you have a nice side dish!

Healthy Couscous Salad with Hummus: Quick & Delicious
Funny enough, I do like ground coriander powder (in moderation). The taste is somehow very different from the fresh herb. So you see that tastes differ a lot and sometimes you like one thing and not the other. I took the hummus in this recipe from the fresh produce department in a container. If you want to make it from scratch, you can do that. here is a nice recipe for you to make a delicious hummus in no time.

Ingredients:
- 150 gram couscous
- 1 el olive oil
- 100 gram chickpeas
- 150 gram White cabbage - finely chopped
- 100 gram zucchini - in small cubes
- 90 gram pomegranate seeds
- 5 tasty tom tomatoes - in small pieces, pitted
- 5 twigs fresh mint - finely chopped
- 6 twigs Parsley - finely chopped
- 1 el ras el hanout
- sea salt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Pour 200 ml of water into a saucepan and bring to the boil. Remove from the heat and add the couscous and add 1 tbsp of olive oil. Stir briefly and put the lid on the pan and let it steam until done. (about 10 minutes, then the couscous has absorbed all the liquid).
- Chop and slice the vegetables as described above. Put in a bowl and mix well.
- Remove the lid from the pan and stir the couscous and season with sea salt and ras-el-hanout.
- Add the chickpeas and pomegranate seeds to the bowl and add the couscous, toss again and serve.
- Delicious bites!
