Cozze gratinate alla Pugliese: Mussels gratinated

Estimated reading time: 3 minutes

Captivated by the charm of a sun-drenched Italian terrace where I enjoyed a delicious Chardonnay, I would like to share with you a piece of my experience. How? By sharing an authentic recipe that unmistakably brings the atmosphere of Italy into your own kitchen: Mussels gratinated, or “Cozze gratinate alla Pugliese”. For a unique twist on this classic dish, we choose the best Zeeland mussels. This fusion of Italian flair and Zeeland quality ensures a wonderful adventure that will bring holiday cheer.

Cozze gratinate alla Pugliese: Mussels gratinated

Zeeland mussels are famous for their superior quality and taste. They owe this reputation to the nutritious waters of the Oosterschelde and the Wadden area, where clear seawater provides an optimal living environment. The mussels feed on natural plankton, resulting in a salty, creamy flavor profile. The strict sustainability standards and seasonal catch make these mussels not only a delicious but also a responsible choice.

Cozze gratinate alla Pugliese, or mussels from Puglia, is really something for gourmets. This dish combines the fresh, salty taste of mussels with a crispy gratinated layer of breadcrumbs, garlic and herbs. The result is surprising and highly recommended. Served with a glass of cool Chardonnay and you imagine yourself on the Italian coast.

  • 1 kilo Zeeland mussels
  • 2 tablespoons fresh chopped parsley
  • 3 tablespoons breadcrumbs
  • 2 cloves of garlic - finely chopped
  • 3 tablespoons Italian olive oil
  • 1 citroen

Herbs and spices

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat the grill in your oven to 200 degrees.
  • Make a crumb of the breadcrumbs, parsley, garlic, pepper and some salt.
  • Open the mussels raw with a potato peeler (the top can be removed) and place them in an oven dish / on the baking tray.
  • Divide the mixture over the mussels.
  • Slide the tray/baking tray into the oven. The mussels are done when they are slightly browned on top. Serve with some lemon wedges.
  • Delicious bites!
Tip: You can also briefly cook the mussels (a minute or 3), then the shells are slightly more open and you can easily open them and remove one half.
