Crispy sushi towers with avocado

The big disadvantage of living in a small village is that there are hardly any possibilities to go out for dinner. You should also not come here for some diversity in takeaway or delivery services. When we still lived in Rotterdam, I had all kinds of cuisines around me within a radius of 2 km. I sometimes miss that and that means that you have to be a bit more creative yourself. The same goes for Sushi, at least a twenty minute drive away is the first really good sushi place. So what to do? Make this recipe for crispy roll sushi yourself!

Although I wouldn't consider myself an exceptional chef, I can still handle myself quite well in the kitchen. For these crispy sushi towers, I carefully followed the instructions for cooking the rice. To my delight, this worked extremely well. Since we love crispy sushi rolls, I decided to combine these towers with crispy chicken pieces and crispy shrimp. The preparation of each ingredient resulted in a delicious meal

Ingredients:

  • 1 pack Sushi rice
  • nori sheets
  • panko breadcrumbs
  • peanut oil
  • 3 roots
  • 2 avocados
  • ½ cucumber
  • black sesame seeds
  • 1 mod fresh salmon
  • 1 chicken breast
  • 1 tray shrimps
  • soy sauce
  • salt
  • peper
  • chili flakes

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • We'll start with the nori sheets first. Place your cutting ring on this and then carefully cut a nice circle along the edges. We can start building the sushi on this and it will stay neatly in place.
  • Then cut the cleaned carrots into very small cubes and do the same with the cucumber. We blanch the carrots briefly in some salted water and then let them drain well. Set aside the cucumber and carrot until use.
  • Use a sharp knife to cut the salmon steak into nice cubes.
  • We are now going to cook the rice. Follow the directions on the packaging carefully. (I had 250 grams of rice with 350 ml of cold water. Bring this to the boil and then let it cook for 10 minutes on low heat. After the 10 minutes, leave the lid on the pan and rest for 15 minutes. But each brand can be different so just follow the directions carefully)
  • While the rice is cooking and then resting, we will fry the crispy chicken and crispy shrimp.
  • To make the crispy chicken and shrimp:
  • Take 3 bowls, put in the first flour, in the second bowl 2 beaten eggs and in the last bowl the panko crumbs.
  • Cut the chicken breast into small cubes, then first dip them in the flour, then the egg and finally the panko. Have them all ready on a plate. Repeat this process with the shrimp as well.
  • Heat a frying pan with a high rim and put a good amount of peanut oil in it (up to 2/3 of the edge)
  • Then place 4 to 5 pieces of chicken at a time in the oil using tongs and watch out for splashing. Fry them until the panko crumbs are nicely browned and turn them halfway through. So make sure that your chicken cubes are small otherwise the inside will not be cooked! When the chicken is done, do this again with the shrimp. Let them drain on a kitchen paper.
  • In a bowl, mix the avocado with the cucumber and squeeze a little lemon juice over it. Season with some salt and pepper and chili flakes.
  • Take the plates and do the nori circle on them first. Put the ring on it and fill it with the sushi rice first. Fill one tower with the avocado/cucumber mix, salmon and crispy shrimp, the other ring with sushi rice, carrots and crispy chicken pieces. (Or other ingredients to taste of course)
