Croissant carrot filled with egg mousse

This recipe has been on my to-cook list for over two years. The special steel cream cones that you need to roll the dough around had been in the drawer for a year. All in all, all the ingredients in the house were now just making it. The idea is not new, but the method of photography is. Because although the Easter theme naturally calls for lots of light colors and a lot of eggs, I wanted to keep it basic. The recipe really takes center stage and works with light shades. And it turned out pretty well if I do say so myself. Funny anecdote: my daughter thought I had rolled a frikandel in it! She wanted to taste it very enthusiastically and when I said “it contains egg mousse” she thanked me kindly. Asking if I wanted to make it again with a frikandel in it. Seems like a great combination hahaha a croissant dough frikandel recipe.

For this croissant dough recipe I bought those cans that are on the refrigerated shelf at your supermarket. Do you know why they should be kept refrigerated? If the cans get warmer than 7 degrees, the can "explodes". You could of course make the dough from scratch, but that is quite a process.

You need:

small food processor

Ingredients:

  • 1 can of croissant dough
  • 4 eggs
  • 3 tablespoons mayonnaise
  • 2 tablespoons crème fraîche

herbs / spices:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 200 degrees.
  • Take the cream horns and cut the dough into thin strips. Roll these around the horns and place them on a baking tray lined with baking paper. Place in the oven for 12-13 minutes until golden brown.
  • Meanwhile, cook the eggs until hard-boiled. Shock them under cold water and peel them. Chop them up a bit and then put them in your food processor.
  • Season with salt, pepper, curry powder and some fresh parsley leaves. Add the mayonnaise and crème frache and turn the mixture into a soft mousse. Spoon into a piping bag and refrigerate until ready to use.
  • Let the carrots cool down on a wire rack and then pipe the egg mousse into it. For decoration, stick some sprigs of parsley in the "carrots".
  • Delicious bites!
