1 crown princess pumpkin
1 romaneco cauliflower
a small bag of potatoes
fresh parsley
mixed nuts (chopped)
olive oil
a tablespoon of honey
50 ml cream
400 ml milk
salt pepper
nutmeg
French spice mix
And this is how you make the Crown prince pumpkin with romanesco:
-First preheat your oven to 200 degrees and line a baking tray with some baking paper.

-Take the pumpkin and cut it in the middle. Remove the seeds, you can save the rest of the pumpkin for a soup, for example. Cut the pumpkin into wedges as you would a melon.
- Then place the wedges on the baking tray and sprinkle with salt, pepper and some olive oil. Then put the tin in the oven for about 35 to 40 minutes. (If you pierce the pulp with a knife you should be able to pierce it easily.)
-In the meantime, we're going to make the romanesco cream. Grab it and remove the florets from the trunk. Cut the butt off the trunk itself and chop the rest into fine small pieces. You also make the florets small. You can keep a few as decoration for your plate.
-Take a pan and add the milk and the finely chopped romanesco. Add a pinch of salt and let it cook on low heat until it is cooked through. Then drain, let it cool for a while and then put it in your food processor. Add the whipped cream and turn the romanesco on high to a creamy consistency. Season with salt, pepper and nutmeg.
To caramelize the nuts:

-In a frying pan put two tablespoons of olive oil and 1 tablespoon of honey over low heat and mix until it has become one. Then add the nuts and let it caramelize. Pour or scoop them onto a sheet of baking paper to cool and make sure the nuts are very hot!
-In an oven dish you put the potatoes cut in the middle. Sprinkle with salt, pepper and the French herbs and a good splash of olive oil, making sure they have a nice layer all over. Put in the oven at 200 degrees for about 35 minutes. (Now I have two ovens but if you don't have that, they can just be placed next to the pumpkin.)
