If you have a sweet tooth like me, then sometimes you just really want something tasty! Nowadays I make sure I have something in the fridge. Something that will keep for a few days so that I don't have to bake or make something every day. This date brownie with chocolate ganache is ideal for that. Furthermore, this snack only contains natural sugars and no other crazy additives. Dates have really been my go-to snack lately so when I came across these I thought I should try this recipe. When I made the dough, I was still quite skeptical whether this would turn out well, but the end result is a real keeper! I'm going to make some variations on this myself.

You are probably familiar with the combination of chocolate and salt by now. I think it's dellicious! The chocolate chips in this recipe are sugar-free. It is pure chocolate, so it is slightly healthier than, for example, milk chocolate. Once you have just whipped the ganache, it will be super soft and creamy. If you put the brownie in the refrigerator for a while and let it set, you can cut the large brownie into 12 smaller pieces. This way you have a delicious snack for a few days. The ganache is optional by the way... it doesn't necessarily have to be added. It saves you a few Kcal per piece 😉

You need:

Ingredients:

  • 200 gram dates - pitted
  • 100 gram peanut butter
  • 60 gram cocoa powder
  • ½ tl baking powder
  • 3 el agave syrup
  • 1 tl vanilla essence
  • ½ tl sea ​​salt
  • 60 gram butter
  • 60 gram sugar free chocolate chips

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat your oven to 175 degrees
  • Remove the pits from your dates and soak them in hot water for 10 minutes and then let them drain.
  • Put your dates in the food processor and add the peanut butter, cocoa powder, agave syrup, baking powder, and vanilla essence and process until everything is well mixed.
  • Line a rectangular baking tin with baking paper. My dough came out of the food processor as a kind of ball, flatten it into the shape of a rectangle of about 2cm thick (20x10cm) and bake for 20 minutes. Then let it cool.
  • Melt the butter with the chocolate chips in a pan and stir well. Pour into a container and place in the refrigerator until almost stiff. For me it took about 10 minutes. Then put the ganache in a tall bowl and use a stand mixer to beat the ganache until it is nice and creamy. Spread this on the brownie with a spatula. Sprinkle with some sea salt and let it set in the refrigerator.
  • Cut the brownie into 12 pieces. You can store this in a Tupperware box in the refrigerator for a few days. Delicious Happen!
Don't have a rectangular baking pan? Then use a square one and push the dough so that it fills half the tin. I used a 20x20cm baking tin, so the brownie was 20x10cm.
