This Easter cake is the perfect treat to share with your loved ones. But actually it's even more fun to make it together. Especially since it's actually not a complicated recipe at all. The basis of this Easter cake is a crispy shortbread that you can easily make yourself or buy ready-made. On top of that comes a thick layer of creamy mascarpone whipped cream that you can make sweet or fresh to taste. Here at home, my daughter immediately envisioned it, eating sweets and tasting while baking, and then making the scoops of whipped cream herself with a piping bag. To complete the Easter cake, you can decorate it with Easter eggs, chocolate, fruit or whatever you want. At Easter you can secretly snack on an extra pastry, because this Easter cake is so delicious that you can't get enough of it.

In these troubled times when we have to keep our distance, the Corona virus has taken over the world and we are literally glued to home, we celebrate Easter in a very different way. For me it is and remains a family celebration that is celebrated with the family.

Nice breakfast, late brunch or Easter cake for dessert after a nice diner. You can buy all the necessities at your local supermarket. Tip get your groceries in time because the supermarket is currently busier than usual. Making this cake will take you an afternoon, but that's just fun. And the result is stunningly beautiful and delicious!

Ingredients:

  • 300 gr wheat flour
  • 200 gr butter - cold cubes
  • 75 gr almond flour
  • 75 gr powdered sugar
  • 2 gr salt
  • 1 tl vanilla essence
  • 1 ei - knocked loose

For the whipped cream mix you will need:

  • 150 gr powdered sugar
  • 400 gr mascarpone
  • 400 ml whipped cream - undefeated
  • 1 bag knock fix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut an Easter bunny out of a piece of cardboard, trace this onto a piece of baking paper. This is your mold for the different Easter bunnies. I made 3 of them.
  • Grab your food processor and first add the flour, icing sugar, almond flour and butter cubes. Mix this until you get a grainy dough. Then add the beaten egg with the vanilla and salt. Turn the mixer back on and you will see that a nice ball of dough will soon be formed.
  • Take a piece of cling film and place the dough ball on it. Close it and put it in the fridge for an hour. For these Easter bunnies I needed a total of two balls of dough. So you make 2x these quantities again.
  • After the hour, take the ball out of the fridge and place it on a baking paper. With the rolling pin you roll out the dough to a thickness of half a cm. Then place your Easter Bunny mold on the dough and cut out the shape with a knife. You can of course use what is left over. When you have made all your Easter bunnies, put them on, for example, a cutting board in the fridge for half an hour until they are stiff again! That's very important, so don't miss it.
  • Preheat your oven to 180 degrees.
  • Take 1 Easter Bunny from the fridge and carefully place it on a baking tray. (Your hare is already on the correct baking paper in the fridge, so you prevent it from breaking.) Bake it in the oven for about 12 to 14 minutes. The edges may be a little brown and the center a nice golden brown. Remove from the oven and let it cool completely on the tin. Then you can carefully lift the Easter bunny off with 2 spatulas or knives. Repeat this process until all your hares are baked and cooled.
  • While the hares are baking you can of course make your whipped cream mix. First put the mascarpone with the icing sugar in your bowl and mix on low speed until the mascarpone has completely softened. Then add the whipping cream and klopfix and start mixing on low speed. Then you can increase the speed to make a nice solid mix. Spoon into large piping bags and then refrigerate until ready to use. (For these hares I needed twice the amount of ingredients)
  • Once all your Easter bunnies have cooled down, place them on a large plate or tray where they can rest nicely. Take the piping bag and pipe nice tufts of equal size on the bottom layer. Then very carefully place the second hare on top and repeat this process one more time. And then the fun part can begin! The decoration. I chose flowers, chocolates and Easter eggs.
  • Delicious bites!
-You can also add some coloring to your whipped cream for decoration to make pink or even a different color whipped cream.
