But here they are really regularly eaten. And no, not like it used to be mashed with a little gravy, although that can also be really tasty, but processed in delicious dishes. The dressing is warm and gives the potatoes a fantastic taste, and of course we finish it off with lots of fresh parsley. Dijon mustard red potato salad
The potatoes in Dijon mustard red Potato salad are the “cerisa” potatoes. A waxy variety with a pinkish-red skin and light yellow tuber flesh. These spuds are excellent to use for a salad like this. The cerisa has a full and creamy taste and can therefore be cooked with the skin still on. Ingredients:
- 1 kg Cerisa red potatoes
- 150 gr bacon paste
- 4 twigs fresh chopped parsley
- salt
For the dressing you need
- the fat that remains from the fried bacon
- 80 ml White wine vinegar
- 3 el sugar
- 2 el Dijon mustard
- 1 el Persillade (spice mix)
- 2 toes garlic pressed
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Clean the potatoes and boil them in plenty of salted water for 20 minutes. I halved the potatoes. Because they are waxy, they will not crumble in the pan.
- Cut the bacon into small pieces and fry in a frying pan until crispy. Scoop them out with a slotted spoon and place on a plate. You leave the fat in the pan.
- Add all the ingredients for the dressing to the warm bacon fat in the pan and mix with a whisk or wooden spoon until you have a smooth dressing. Do this on very low heat so that it doesn't boil like crazy.
- Drain the potatoes and let them drain well, add them to the frying pan with the warm dressing and toss them well so that there is a nice layer in the potatoes all over. Add the bacon bits and toss into a bowl.
- Garnish the salad with the finely chopped fresh parsley and serve.
