After tasting these three different tomato pestos, I was immediately enthusiastic. Also very tasty with a goat cheese sandwich I can tell you. A few facts about these tomato pestos because I think it's important to mention:
- Because they consist of more than 50% tomato, they contain 40% less fat than an average pesto.
- The red and orange variant contain 35% less salt than, for example, other brands.
- They are sweet and creamy, so they can be used for pizzas, pastas, and salads.
- PDO cheeses such as Pecorino and Grana Pandano are used (certified Italian cheeses).
Perfect for this break bread recipe! This way you get a piece of Italian sun on the table.

And this is how you make it:
- Take your mixing bowl with it, I immediately use the bowl of my kitchen mixer, put the lukewarm milk, the yeast, and the sugar in it and mix it briefly. Then let it sit until it bubbles. (about 5 minutes).
- Then add the 80 grams of melted butter, the salt, and the wheat flour and turn on your kitchen mixer on the lowest setting until it is completely bound and starts to form a dough. Then you can make it a little harder and knead the dough for at least 5 minutes.
- Remove the dough from the bowl, pour a little olive oil into the bowl and put the dough back in, brush the top with some oil as well. Place a damp tea towel over the bowl and let the dough rise for two hours until the dough has doubled in size.
- Melt the 30 gram butter and add 3 cloves of crushed garlic.
- Line your oven dish with a piece of baking paper and spread some tomato pesto and melted butter-garlic mix on the bottom.
- After the two hours, remove the tea towel from the bowl. Remove a small piece of the risen dough at a time and crush it between your hands. Fill it with a teaspoon of tomato pesto and some grated mozzarella. Alternate the three types of tomato pesto. Fold it into a ball. Place the balls in the baking dish with the fold side down. Repeat until all the dough is used up.
- Cover the baking dish with the damp tea towel and let it rise for another 30 minutes.
- Preheat your oven to 190 degrees.
- Remove the cloth and brush the balls with some butter and garlic and some tomato pesto and put in the oven for 20 to 25 minutes until the top is golden brown.
- Serve warm and carefully break up the balls.
- Delicious bites!
