Edamame bruschetta with radish
Estimated reading time: 4 minutes
When I was on holiday in a sunny country, I saw those tasty red radishes everywhere at the market stalls. They looked so fresh and crispy that I immediately felt like tasting them. Then I thought to myself: I have to do something with that. I really like the spicy-fresh taste of radish and it goes very well with the soft and creamy edamame bean. I decided to create a nice case of fusion cooking: this edamame bruschetta recipe from the oven with radish. The delicious Italian ciabatta bread with garlic oil and the Japanese edamame beans form a delicious combination that you would not expect quickly. And together they form a delicious sandwich that can serve as a snack or as a small starter with a nice dinner
And the great thing is that it is put on the table in no time and does not have a super complicated preparation. All you have to do is boil the beans, cut the radishes, spread the bread and put everything in the oven. What does a man want more? This is a bruschetta recipe that you will love!
And this is how you make the Edamame bruschetta with radish:
-First we make the garlic oil to cover the buns. Crush the garlic cloves in a press and collect it in a container. Sprinkle with salt and pepper and then the olive oil. Stir it all together and let it sit until ready to use.
-Preheat the oven to 220 degrees, then bake the ciabatta for 8 to 10 minutes until nicely cooked and brown. Remove it from the oven and cut into nice slices with a bread knife. Grab a brush and the bowl with the garlic oil. Brush the buns all over with the oil on one side. Spoon some of the garlic on the buns as well. Then set your oven to grill mode and briefly grill the buns until the edges change slightly.
-In a large bowl, place the two drained cans of beans and the finely chopped curly parsley. Add a small dash of olive oil and mash with a fork to a nice spreadable paste.
-With a mandolin or a very sharp knife, cut the radishes into thin slices. Cut the parmesan cheese into thin slices as well.
-Take in the slightly cooled bruschettas and first spread the edamame beans on top and top them off with some loose beans and the radishes.
-Finally, garnish the bruschetta recipe from the oven with the parmesan cheese and a drop of olive oil
