On holiday there were delicious radishes everywhere at the market stalls. Then I thought I should do something with that. I like the tangy-fresh taste of radish and it pairs really well with the soft edamame bean.

Ingredients:

  • 1 bake off ciabatta
  • 2 cans edamame beans - drained, approx. 400g total
  • 3 twigs fresh curly parsley
  • 2 toes Garlic
  • 40 ml extra virgin olive oil
  • 4 radishes
  • 1 break Parmesan cheese - to taste (for shavings)

And this is how you make it:

  • We first make the garlic oil to cover the buns. Crush the garlic cloves in a garlic press and collect it in a container. Sprinkle with salt and pepper and then the olive oil. Stir it all together and let it sit until ready to use.
  • Preheat the oven to 220 degrees, then bake the ciabatta for 8 to 10 minutes until nicely done and brown. Remove from the oven and use a bread knife. Cut the ciabatta into slices of approx. 1,5 cm thick… brush generously on one side with the garlic oil… Grill the rolls briefly (1-2 minutes) under the hot oven grill until the edges are golden brown. Keep a close eye on them, this goes quickly!
  • In a large bowl, add the two drained cans of beans and the finely chopped curly parsley. Add a dash of olive oil and mash the edamame beans with a fork until coarse. For a smoother spread, use a hand blender or food processor. Mix in the chopped parsley and a dash of olive oil.
  • Using a mandolin or a very sharp knife, cut the radishes into thin slices. Cut the parmesan cheese into thin slices as well.
  • Add the slightly cooled bruschettas and first spread the edamame beans on top and top with some loose beans and the radishes.
