This surprising Edamame soup with mint is a healthy, light soup, perfect as a vegetarian starter or lunch, with flavours reminiscent of sushi. While I was on holiday, a new challenge arrived at my home. This time we are going to work with the edamame bean, also known as soybeans. In Japanese, eda means branch and mame are beans, which literally means “beans on a branch”. The great thing about these beans is that they have high nutritional values; they are rich in protein, iron and omega-3 fatty acids. In addition, 100 grams of edamame contains approximately 120 Kcal, making them perfect for a healthy lifestyle. Now I had to come up with a special dish that would let these edamame beans play the leading role. This easy soup recipe for soybean soup with mint is a perfect choice for anyone looking for a healthy soup.

And so this edamame soup with mint was born. All kinds of ingredients that you could just expect in a roll of sushi, but now we make a lukewarm soup with it.

Edamame soup with mint and soy sauce

Ingredients:
- 2 cans edamame beans - (approx. 200g drained weight)
- 1 medium sized cucumber
- 10 leaves fresh mint
- 100 ml vegetable broth
- soy sauce - to taste
- black sesame seeds - approx. 1 tsp, for garnish
- peper - freshly ground, to taste
- fresh mint - extra leaves for garnish

And this is how you make it:
- First, open the cans of edamame and empty them into a colander. Then rinse them under the cold tap and put them in a stockpot.
- Add the 10 mint leaves and the 100 ml stock. Season with some freshly ground black pepper. Bring to the boil and let it cook on low heat for 15 minutes.
- Meanwhile, we cut the cucumber into small cubes on a cutting board.
- After 15 minutes, add the cucumber and take your hand blender. Puree the mixture until it has become a nice smooth mass. Because you add cold cucumber, you get a lukewarm soup.
- Spoon the soup into nice glasses and finally sprinkle some black sesame seeds and a small dash of soy sauce. We therefore do not use salt in this dish because the soy sauce is salty enough.
