While I was on vacation, a new challenge arrived at my house. This time we are going to work with the edamame bean. That's a soy bean. Eda means branch in Japanese and mame means beans. So literally "beans on a branch". The great thing about these beans is that they have high nutritional values. They are rich in protein, iron and omega-3 fatty acids. In addition, 100 grams of edamame contains about 120 Kcal, so they fit into a healthy lifestyle. And so this edamame soup with mint was born. All kinds of ingredients that you could just expect in a roll of sushi, but now we make a lukewarm soup with it.

And this is how you make the Edamame soup with mint:

-First open the cans of edamame and empty them in a colander. Then rinse them under the cold tap and put them in a stockpot.

-Add the 10 mint leaves and the 100 ml stock. Season with some freshly ground black pepper. Bring to the boil and let it cook on low heat for 15 minutes.

-Meanwhile, cut the cucumber into small cubes on a cutting board.

-Add the cucumber after the 15 minutes and use your immersion blender. Puree the whole until it has become a nice smooth mass. Because you add cold cucumber, you get a lukewarm soup.

-Pour the soup into nice glasses and finally sprinkle some black sesame seeds and a small dash of soy sauce. We therefore do not use salt in this dish because the soy sauce is salty enough.
