I love salads, so during the vegan switch challenge I can have fun with the amount of different salads I can make. A vegetable salad without further additions of animal products. I must admit that I might have liked the salad even better with some extra goat cheese and a bit of fried bacon, but I adhered to the protocol!

This vegan salad with quinoa, avocado and pomegranate is one of my favorites. It is a salad that you can make quickly and easily and that is very nutritious and tasty. The quinoa provides a good base and contains a lot of proteins. The avocado makes the salad creamy and is full of healthy fats. The pomegranate gives the salad a fresh and sweet touch and is packed with antioxidants. I finish the salad with a simple dressing of olive oil, lemon juice, salt and pepper.

- 50 gram White beans
- 1/2 Red onion
- 3 tomatoes
- 1 el roasted sunflower seeds
- 20 gram walnuts
- fresh basil leaves
- 1 el olive oil
- 2 tl balsamic vinegar
- pinch salt
