But if your spit is long enough you can also grill 4 fillets at the same time. Tying up the meat was a bit of a job, by the way. I'm not very familiar with that, so I watched Gertjan Kiers' YouTube video several times. He developed a handy and simple knot to tie up your meat nicely.

We prepare this duck breast in a rotisserie oven. You could also make this duck breast recipe in an oven dish, but you will have to turn it several times. That's why I'm such a fan of my KitchenAid oven. The spit is included and you just have to turn the oven on to "turbo grill", the temperature to medium and it turns itself round and round.
As I wrote in the recipe card, I have made this several times. It was really red the first time. You want your meat to be nicely pink. It is therefore advisable that you "test cook" this duck breast rotisserie Christmas recipe before you stress in the kitchen.

Ingredients:
- 2 duck breast fillets
- 1 twig fresh thyme
- 1 el Persillade (spice mix)
- salt
- peper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Let the duck breast come to room temperature. (Go for quality and buy them at your butcher or wholesaler).
- Sprinkle the inside with some salt, pepper and persillade spice mix. Place a sprig of thyme on one half. Put the other half on top. Make sure the sheet is on the outside.
- Grab your kitchen twine and tie up the duck breast. A piece of string every 2 to 3 cm.
- Stick the spit through your tied duck breast, and secure the spikes in the meat, or as I did with an extra string around it.
- Turn on your oven and put the spit in the oven. I set it to "average" temperature. (That comes out to about 236 degrees in a KitchenAid). Let it run for 35 minutes. * see notes
- Remove the duck breast from the spit and let it rest for a while. Pull out the skewer and cut the strings. Remove the thyme sprig.
- Cut with a sharp knife into nice thin slices and serve with, for example, cranberry sauce or a nice gravy.
