Duck breast skewer with apricots
In France I learned to eat duck breast fillet. A beautiful piece of meat that is always available there and often very nice thick breast fillets. Here in the Netherlands you can often find them on the shelves around Christmas. However, it is available all year round from the better butcher. In this case, we make a delicious marinade and put it in the fridge overnight to marinate. This time I baked the duck breast skewer with apricots in the oven. This recipe wouldn't look out of place on a BBQ in the summer. So it is not a difficult recipe to make.
And this is how you make the duck breast skewer with apricots:
-We start the night before you want to eat it with the Duck breast skewer with apricots, so that the meat can marinate well. First remove the leaves from the rosemary sprigs and chop very finely. Remove the skin from the fillets with a very sharp knife. Cut the meat into nice cubes of about two centimeters. Put them in a plastic bag. Then add the chopped rosemary and the rest of the marinade ingredients. Close the bag and shake it well. Then put it in the fridge and let it marinate until use.
The next day we make the skewers first. I used steel skewers, but you can also use wooden skewers. You have to soak them in water before using them. Thread the meat onto the skewer and put half an apricot in between each time. Two skewers per person. Place them on a baking tray lined with baking paper. Preheat your oven to 200 degrees.
- Cut the red potatoes for the duck breast skewer with apricots through the middle and put them in an oven dish. Pour over some olive oil and then season to your own taste. You can also add a few sprigs of rosemary. Place in the oven for 30 to 40 minutes.
When there is still 10 minutes baking time left for the potatoes, put them in the bottom of the oven. Slide the baking tray with the skewers into the center of the oven. Bake the skewers. I did this a bit by feel because you want them to have a nice rosé. They are then cooked through, but the meat still looks nice and pink. So don't put it in the oven for too long and otherwise take out one skewer to see if it's nice and pink inside.
