Salads are an endless source of inspiration. In fact, anything can be used and nothing is too crazy. Sometimes you make a combination that is absolutely right! This duck breast salad recipe is one of them, really all the flavors together make it like an angel pissing on your tongue. Not everyone will love duck breast, but I would still recommend preparing it. Now that takes quite a bit of dexterity because it can also go terribly wrong. You want a nice rosé baked breast with a nice crispy skin. And while we're grilling, we immediately put the zucchini on the grill. We're going to prepare the nuts first. Chop the Brazil nuts into small pieces. Put the olive oil and honey in a Teflon-bottomed frying pan and place over medium heat. As soon as it starts to bubble, add the pieces of nuts and fry them until all pieces have a layer of caramel and they have turned nicely brown. Spoon them onto a piece of baking paper and be careful not to put one in your mouth! They are hot!! Let them cool down before use.
-Make sure the duck breast is at room temperature. Cut the fat layer crosswise so that a nice pattern is created. Sprinkle with some pepper and persillade.
-Make sure the BBQ is hot and then bake the breast on the skin first. Once the fat starts to melt, turn it over and cook the other side. About 7 minutes (The core temperature should be 57 degrees) Then let it rest for 10 minutes under foil before you cut it.
-While the breast is baking, grill the thickly sliced zucchini.
-Take the bowl and put the lettuce on it, also the cucumber and the cheese that you have cut into pieces.

* Blue D'Affinois in a creamy blue-veined cheese. It looks a bit like brie with a blue mold in it. So if your cheese farmer doesn't have Blue, ask for such a cheese.
