But no, I made the noodles from a delicious omelette that I cut into long strips. This means you get much less carbohydrates and it is a nice light meal. Marinate your meat in the morning or the evening before, so that the flavors are well absorbed. And this is how you make the egg noodles with marinated chicken thigh:

-Like I said in the intro, marinate your meat well in advance. This just makes it taste better. So let's start with this first. Cut the chicken thigh fillets into pieces and rub them well with the ingredients of the marinade.

-Crack three eggs into a measuring cup and beat them together. Make an omelette from this and set it aside until use.

-Scrape the carrot clean and cut it into long narrow strips. Do the same with the pak choi, cucumber and bell pepper. Cut the spring onions into thin rings.

-Take a frying pan and fry the meat until nice and golden brown, then remove it from the pan and set aside on a plate. Put the vegetable strips in the pan and stir fry them on high heat for a few minutes until they are al dente.

-Deglaze with some soy sauce and add the chicken again. Cut the omelette into thin strips and add these too. Sprinkle with the sesame seeds.
