And this is how you make it:
- Break the eggs into a mixing bowl and mix with the almond milk and season with salt and pepper. Whisk well.
- Heat ½ tbsp olive oil in a frying pan and fry the egg wraps 'dry' for 2 minutes per side on medium/low heat. Repeat 3 times. Store under aluminum foil until use.
- Cut the tomatoes in half and cut the mozzarella into thin slices. Remove the basil leaves from the sprigs.
- Spread the egg wraps with the pesto and top with spinach, tomato and mozzarella. Add a few basil leaves and carefully roll up the wraps.
- Cut the wraps in half diagonally and serve with extra pesto if desired.
