And this is how you make the Egg Wrap with spicy chicken and salsa:
Start by cutting the chicken into nice strips and season it with a mix of Mexican spices and a generous dash of olive oil. Let the chicken marinate for a bit, so that the flavors are well absorbed. While the chicken is resting, grab the food processor and add all the ingredients for the salsa. Don't forget to clean the garlic cloves and squeeze the lime well. Cut the red onion into quarters and remove the outer skin for a fresh taste. Blend everything in the machine until you get a smooth, flavorful sauce. Taste and adjust the seasoning with salt and pepper. For an even richer taste experience, you can prepare both the salsa and the marinated chicken the night before, but this is of course not necessary. This ensures that every bite is full of delicious flavors!
Making the wraps:
-Take a measuring cup and put the three eggs in it and beat them. Then fry an omelette in a frying pan with a little olive oil.
- In another frying pan, fry the chicken pieces until cooked through. Cut the bell pepper into very thin strips.

Finally, spread the omelette with the salsa and spoon some quinoa, arugula, the chicken and the pepper strips on top. Roll it up carefully.

For the salsa you will need:
- 1 tin can diced tomatoes
- 4 twigs fresh chopped parsley - cilantro if you like it
- 1 small red pepper
- 2 toes Garlic
- 1 the juice of the lime
- 1 Red onion
- peper
- sea salt
- 1 el sugar
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- First we cut the chicken into strips and then season it with the Mexican herbs and a dash of olive oil. Then let it marinate for a while.
- Grab your food processor and add all the ingredients on the list for the salsa. Of course you clean the garlic cloves and squeeze the lime. Remove the outer skin of the red onion and cut it into quarters. Now turn your machine until the whole is a nice sauce. Taste and season with salt and pepper.
- You can make both the salsa and the chicken the night before to allow the flavors to absorb well, but this is not necessarily necessary.
