Tapas, I love it! Tasty little bites with plenty of flavour. You can actually adjust these empanadas filled with seasoned minced meat to how you like them. Do you want them a bit spicier, do you want them a bit bigger or smaller? This is actually a nice basic empanadas recipe. The word comes from the verb “empanar” which literally means to wrap. So we pack tasty minced meat with a finely seasoned dough. You can fry them as well as bake them. In the photo you see an orange dipping sauce that I often make at a bbq or a tapas evening. With this empanadas recipe I served a nice dipping sauce. Maybe I should write it out sometime, but until then I'll give you the ingredients here:
- 4 tbsp mayonnaise
- 5 tbsp yogurt
- 1 tbsp curry sauce
- salt pepper
- paprika powder
- garlic powder
And of course also some persillade mix, now this is an “approximate estimate” because usually I just do something. So it never really tastes the same… don't worry, the base remains the same. Ingredients:
- 300 gram wheat flour
- 180 gram butter
- 125 ml sour cream
- 1 ei
- 1 tl salt
- 1 el persillade spice mix
- 3 el extra flour for pollinating worktop
- 3 el milk to cover the empanadas
For the filling:
- 250 gram minced beef
- 2 el Persillade (spice mix)
- 1 tl chili powder
- 1 ui
- ½ Red pepper
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Take the mixing bowl and add the flour and butter. Mix the dough with your fingers until it resembles breadcrumbs, then mix in the persillade, sour cream, egg and salt and knead into a dough. Wrap in cling film and place in the fridge for half an hour.
- Chop the onion, cut the bell pepper into small cubes and grab a frying pan.
- Roll the mincemeat with the persillade, chili powder and after a few minutes add the onion and bell pepper and fry until the mincemeat is completely browned.
- Remove the dough from the refrigerator and roll it out between two sheets of baking paper with a rolling pin until about half a cm thick.
- Cut circles out of the dough with a glass, note it is a bit of a sticky dough, you can sprinkle a little bit of flour on it.
- Prepare a baking tray lined with baking paper, take one round and spoon half a tablespoon of minced meat mix into the dough and fold it closed. Place on the plate and seal the empanadas with a fork. Repeat until all the dough is used up.
- Brush with milk and place in a preheated oven at 200 degrees. Bake for about 20 minutes until nicely golden brown. You can eat them both cold and hot.
