How often do you actually eat a spring roll? To be honest I hardly ever do. We rarely order from the Chinese here and if I do then no spring roll. Every now and then I buy one in town with one of those trolleys with Vietnamese spring rolls. And yet I chose to make this oven-baked filo dough spring roll when I got back into Mandy's food blog swap. I already knew my assigned foodie this time, in fact she has even been to my house once. The spring roll is a dish that originated in China, but you can find it in almost all Asian countries. A nice fact is that most spring rolls you see are not made in Asia, but just here in the Netherlands. At Beckers, about 700 spring rolls are produced every day and are exported abroad. If you make spring rolls yourself, you also have the advantage that you can choose what you put in them.

Ingredients:
- 350 gr chicken thigh
- 400 gr noodles vegetables - package
- 3 eggs
- 1 teen Garlic
- 1 witte ui
- 1 pack phyllo dough
- 1 block chicken bouillon
- wok oil
- Chinese herbs
- soy sauce
- sesame seeds white and black
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Preheat your oven to 200 degrees.
- Remove your sheets of filo dough from the oven and from the packaging, let them thaw and carefully unfold them. (You can put a damp tea towel on top to prevent them from drying out)
- Take your pan and add water and the stock cube and bring to the boil. Add the diced chicken thigh and blanch for 10-15 minutes until the chicken is cooked through.
- In the frying pan you bake an omelette of the three eggs. Set aside on a plate until use.
- Chop the garlic and onion.
- Heat the frying pan again and fry the garlic, onion and noodles vegetables. Season with the Chinese herbs and add 1/2 tbsp soy sauce. Then turn off the fire.
- Remove the chicken from the pan and allow to drain briefly, cut or tear the chicken into pieces and cut the omelette into strips and add to the vegetable mix.
- Add the sheets of filo dough. Spread 1 sheet with some wok oil, place 1 more sheet on top and spread it too. Spoon the filling onto the dough sheets and carefully fold into a parcel. Brush the outside with a little oil and sprinkle with the sesame seeds.
- Repeat with the rest of the filo sheets.
- Place them on a baking tray lined with baking paper and put them in the oven for 20-25 minutes until they are golden brown.
- Serve with spring roll sauce and Delicious Happen!
