Of course I make a lot of smoothies, but this raspberry chia seed pudding is also a very nice breakfast. It's easy to make and you can keep it in the fridge for up to two days. In principle, you can use all kinds of fruit for this. You just need to puree it and combine it with the chia seeds. Note that these absorb a lot of moisture, so you really don't need a lot of them!
Raspberry chia seed pudding
Those little chia seeds can absorb up to 12x their own volume and moisture! A kind of gel-like layer is created around the seeds. That is why we also talk about pudding, because it looks a bit like it. Although not so well known here in Europe, these seeds have been cultivated and used in South America since the Aztecs. Only in recent years have they increased enormously in popularity.
To create a personal and refreshing breakfast, you can experiment with different fruit combinations. In addition to the basic idea, you can also use mango puree or strawberries
By being creative with these ingredients, you create a breakfast that is completely tailored to your taste. Dare to mix and match with various toppings such as nuts, seeds, or even a pinch of cinnamon for an extra taste sensation

Ingredients:
- 250 gram raspberries - from freezer box freezer compartment
- 4 el chia seed
- 200 gram coconut yogurt
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Put the frozen raspberries in a saucepan and add a little water. Slowly bring the fruit to a boil and allow to thaw. With a wooden spoon you push the fruits apart into a kind of raspberry mousse.
- Spoon the raspberries into two glasses and add 2 tbsp chia seeds per glass. Stir well and then put in the fridge. The seed will absorb all the moisture from the raspberries and form a "pudding".
- The next day, spoon 100 ml of coconut yoghurt on top of the pudding and serve.
- Delicious bites!
