When we are in Aix-en-Provence, a visit to Christoph's is definitely on the agenda! There you buy them in large boxes and they are baked right in front of you. Did you know that a Madeleine should weigh 28 grams? Of course they don't taste any less if it is slightly above or slightly below… The French Madeleines cake recipe is super easy and easy to make. In fact, I think you probably have most of the ingredients at home.
There is also a lot to vary with this French Madeleines cake recipe. They do that in France too. You can also buy them at the bakery in all kinds of flavors and colors! You have them in almond flavor, with chocolate, orange and other various flavors.
Even a not so experienced baker (I prefer to cook than bake) like me gets them out of the oven perfectly so you should be able to do that too. Buy a steel baking pan. I also tried them in my silicone mold and that didn't work out. A kind of flat ufos without the bulging belly on it….

Ingredients:
- 3 eggs
- 200 gram flower
- 150 gram granulated sugar
- 100 gram butter - melted and cooled slightly
- 1 citroen
- 8 gram baking powder
- 1 tl vanilla essence

And this is how you make it:
- With your microplane you grate the zest of the lemon, the zest of half a lemon is enough. Squeeze it, here too the juice of half a lemon is sufficient.
- Take your stand mixer and put the eggs with the sugar in the bowl and beat until it has become an almost white mixture.
- Pour in the melted but no longer hot butter, the zest, lemon juice, baking powder, vanilla essence, and add the flour, shaking gently. Turn to a nice smooth dough.
- Spoon the dough into your piping bag and put it in the fridge for an hour.
- Grease and flour the Madeleine mold.
- Preheat your oven to 200 degrees.
- Pipe a little dough into each mold, but not too full. The dough expands during baking.
- Bake the Madeleines for about 8 minutes until golden brown. Let it cool down for a while and sprinkle with more powdered sugar if desired.
