This is a recipe dude… So good! Do you like sweet pears? During our holiday in France I visited a typical French market and bought delicious pears there. So nice to have a chat with those market vendors about their products and the region. Everything fresh from the land and in your hand. This French pear with caramelized nuts is a keeper.
In the Netherlands I also scored high points with family and friends. I did not caramelize the nuts with sugar but with honey. And that's super easy too! So take a look at what kind of honey you are going to use. If you choose one with a certain taste, you will certainly find it in your recipe.
Caramelization is a cooking technique used to heat and concentrate the natural sugars in foods, giving them a deep, complex flavor and color. The process involves heating sugar until it begins to melt and turn into a dark brown, concentrated liquid.
There are several ways to caramelize sugar, depending on the purpose. For example, when sugar is caramelized for a dessert, such as crème brûlée, it is sprinkled on top of the sugar with a blowtorch and then burnt to a crispy layer. When sugar is caramelized for a sauce, such as a caramel sauce, the sugar-water mixture is heated to a color and thickness appropriate for the recipe.
Caramelizing sugar is a delicate process and requires attention, as it can burn quickly and become bitter. It is important to stir the sugar constantly while caramelizing to prevent it from burning.
We're going to caramelize the pecans first. You do this by mixing 2 teaspoons of olive oil with 1 tablespoon of honey in a bowl, then add the nuts. Make sure they get a nice layer of the oil mix. Take a cold frying pan and put it on the stove. Then put the nut mix in the pan and fry them on a low heat until they caramelize. Make sure the fire is not too high or they will burn. Then set them aside to let them cool. They are very hot so be careful with your fingers! If they stick to your plate, loosen them with a knife. Or put a sheet of baking paper on the plate so that you can easily remove them.
- Then cut the chicory into narrow strips and put a little bit of vinaigrette on it, put a small bottom on a nice plate.
- Then you cut the bottom of the pear so that it is stable and then cut the pear into a number of slices.
-Take the cheese and cut it into thin strips, you can cut it in the shape of the pear and so you build a nice stack. A nice recipe pear with pecans.

Garnish some caramelized nuts and some lamb's lettuce around the pear tower and finally drizzle some honey on the pear.

- 100 gram blue-veined cheese
- 75 gram pecans
- 1 stump chicory
- 50 gram lamb's lettuce
- 2 teaspoons olive oil
