Stew. You can make me very happy with a dish that has been simmering for hours and hours. The whole kitchen smells of delicious herbs. And then the first bite to taste and you know it's going to be a treat at the table. That feeling, that emotion I can't get enough of it! In my freezer was still a piece of veal shoulder that had to be used. stew recipe French stew with potatoes
It's a shame to leave those types of meat out for too long because then it doesn't taste like anything anymore. Here in the Netherlands you often have to buy veal to order from your Keurslager. It is not the most widely available piece of meat. You know my love for French cuisine, well everything in this recipe exudes France! The herbs, the meat, the potatoes, let's get started with this French stew with fried potatoes!
And this is how you make it:
-First take a frying pan with a thick bottom or a frying pan and add some olive oil. Heat it up and then fry the pieces of veal until nicely brown. Sprinkle with some salt and pepper and 3 tablespoons of French herbs and when the meat is brown add the chopped garlic.
Then we will gradually add the vegetables. First the onions, fry them until translucent and then add the courgettes. Finally the mushrooms and then fry this for about five minutes while stirring.
-In a measuring cup, put 200 ml of lukewarm water and add the flour, mix well until the flour is completely dissolved in the water. Pour it into the pan and add the crème frache. Stir everything together well and then place the pan on a stew. Let it simmer for at least an hour, but two hours is also fine.
- Before you want to serve, take another frying pan and add some olive oil here too. Bake the potatoes with some French herbs until they are golden brown.

Finally, place the potatoes on a large platter and spoon the stew on top. Garnish it with some fresh thyme from the garden.
