When it's this hot outside, you want to cool down a bit. No problem with this frozen pineapple amaretto cocktail! In addition, it is also made in no time, you only need a blender, preferably a power blender that can “crush” ice cubes well. You can also serve this cocktail very well as a dessert. The consistency is a bit like a slushy, but if it's hot enough it will melt quickly enough in your glass. We use amaretto, and nowadays you also have very good non-alcoholic versions of it.
Frozen pineapple amaretto cocktail
Because pineapple and amaretto are quite sweet, we also add some lemon juice to balance it out a bit. Because we make it with crushed ice you could also freeze it again. Then put some of this cocktail in ice cube trays. Freeze these and take them out at another time. Then you throw them back in the blender and crush them again. Or serve them as ice cubes and add some sparkling water.
We first dip the edge in some water and then we put it through some coconut grater for a tropical effect to your cocktail.

Ingredients:
- 150 gram ananas - (fresh pineapple cubes)
- ½ citroen - squeezed
- 80 ml Amaretto
- 250 gram ice cubes
- 1 el coconut chips

And this is how you make it:
- Put the pineapple cubes with the lemon juice in a blender and turn until the juice has become.
- Add the ice cubes and crush until you have a kind of slushy consistency.
- Dip the edges of the galls in some water and then the grated coconut, scoop the pineapple slushy into the glasses and pour the amaretto over it.
