“With a little help from a friend”… This recipe was partly created by my American friend Kimberly. She had used another recipe of mine to make these delicious snacks. She had only skipped the frozen yoghurt step. Both snacks are very tasty, I prefer the version where we also dip them in yoghurt and freeze them again. Making these snacks does take a bit of time, but that is mainly the stiffening in the freezer. So you can do plenty of other things in the meantime. And because we are making these Frozen yoghurt chocolate raspberries chia snack in the freezer they last a while. So yes it is a bit of work, but then you can enjoy them for weeks. So don't eat them all in a row!

Frozen yogurt chocolate raspberry chia snack
For this snack I used coconut yoghurt. That is a plant-based yoghurt. If you also use vegan chocolate, this is a completely vegan snack. If you go for some milk chocolate and Greek yoghurt, of course you don't, because then we have used animal products. Whichever version you choose, both are super tasty. If you want to snack, let your snack defrost for ten minutes, otherwise it will be very hard and cold! The chia seed pudding recipe where this idea came from can be found here.

Ingredients:
- 200 gram dark chocolate
- 100 gram raspberries - from the freezer
- 3 el chia seed
- 200 ml coconut yogurt
- ½ tl sea salt
- 1 el coconut oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Grab your pan and add the raspberries and a dash of water. Push the raspberries apart until a kind of raspberry pulp is created.
- Remove the pan from the heat and add the chia seeds. Mix well and let it sit for 15 minutes to cool and let the chia seeds absorb the liquid.
- Place a sheet of baking paper on a cutting board and with a spoon form circles on the paper. I formed about 20 circles. (if there is any chia pudding left you can just eat it).
- Place the cutting board with the circles on it in the freezer and let it harden. (one hour to 2 hours)
- Remove them from the freezer and loosen from the sheet of baking paper and dip each round in the coconut yoghurt and place back on the sheet of baking paper and then back in the freezer. (again for about 2 hours)
- Melt the chocolate in a bain-marie with the tablespoon of coconut oil. Stir well and let it cool down a bit, but make sure the chocolate is still liquid!
- Take the circles out of the freezer again and dip them in the chocolate and repeat with all the circles. Sprinkle some sea salt on each circle. Again, they go back in the freezer until the chocolate is stiff again. Then you can store them in a Tupperware box in the freezer.
- if you want to eat one take it out of the freezer and let it come to room temperature for 1 to 10. Delicious bites!
Yes yes yes chocolate! We love it…. and can make many more delicious snacks with it. Of course I have a few more nice examples for you. Take advantage of it, and you know: sweets in moderation!
