We start with the filo dough. Let it thaw slowly. Then place a damp tea towel over the sheets so that they do not dry out
Cut the sheets of filo dough lengthwise into 3 strips with a sharp knife.
Clean the bell pepper and cut into very small cubes, the spring onion into rings. Take a frying pan and put some wok oil in it. Break the 3 eggs into the pan and stir until you have a scrambled egg. Add the bell pepper, soybeans, spring onion, sliced prawns and finely chopped garlic. Season with salt, pepper and a teaspoon of sambal. Turn off the fire and leave until we start filling the samosas samosas.
Take a strip of filo dough 1 at a time. Brush it with a little wok oil. Why wok oil? This one has a nice taste and adds just that little bit extra to the dish.
Spoon 1 tbsp on the sheet and then fold it into a triangle. Follow the entire strip until the dough is used up and your contents are nicely in a folded triangle. Repeat until the entire skillet is empty.

Heat a wok and put half a bottle of peanut oil in it. Start frying when the oil starts to smoke a little. Keep an eye on the temperature, otherwise they will bake too quickly. Fry the samosas in 4 or 5 batches in the pan and scoop them with a slotted spoon onto a piece of kitchen paper to drain briefly.
