My love for cooking, working at home with good food and making beautiful dishes is no longer a secret. In the meantime I have already managed to fill this blog with many beautiful dishes, delicious snacks, fine salads and much more. I will, as it were, take you along in my culinary development and would like to share my passion. This baked burrata and grilled fruit salad was kind of a happy accident. Really a summery Burrata salad fruit salad recipe. A number of ingredients were in the fridge waiting to be used and the burrata was almost past its date… So check carefully when you buy something, but that gave me the idea for a burrata recipe. Burrata, grilled vegetables, grilled fruit and all that together on one bowl!
Burrata is an Italian fresh cheese made from mozzarella and cream. It has a soft, creamy texture and a mild, fresh taste. You can eat burrata cold, but I think it's even better to fry it in a frying pan with some olive oil, salt and pepper. This gives it a light brown crust and makes it even more creamy on the inside. You can also add some herbs, such as basil or oregano, for extra flavor.
Baked burrata and grilled fruit salad
For the grilled fruit and vegetables you can use different types, depending on what you have at home or what you like. I chose zucchini, bell pepper, eggplant, watermelon, peach and nectarine. You can also use other vegetables or fruits, such as tomato, pineapple, mango or apricot. The most important thing is that you cut them into slices and coat them well with olive oil, salt and pepper before placing them on a hot grill pan. Let them grill for a few minutes per side until they have nice stripes and are soft.
So in this baked burrata and grilled fruit salad we grill the fruit. The watermelon certainly loses its moisture because of this. But this makes the flesh very soft and even resembles a bit of meat. While this salad is completely vegetarian! And in addition to the burrata, grilled vegetables, we also add some pine nuts and lettuce. Super healthy and full of flavour.
To finish this salad you can drizzle some balsamic vinegar or honey over it for a sweet and sour contrast. Or you can sprinkle some fresh mint or basil on top for a fresh accent. Serve this salad as a starter or as a main course with some bread to dip in the cheese and juices of the fruit. You'll be amazed at the delicious combination of flavors and textures in this Baked Burrata and Grilled Fruit Salad!

Ingredients:
- 1 burrata ball
- 1 slice watermelon
- 3 wild peaches
- 1 bag of mixed salad
- 1 Eggplant
- pomegranate seeds
- pine nuts
From the pantry:
- 1 ei
- flower
- bread-crumbs
- Persillade (spice mix)
- olive oil
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Heat your grill, or your BBQ.
- Slice the aubergine and brush with olive oil, sprinkle with herbs to taste and grill first. Then keep until use.
- Cut the melon into wedges and the peaches into slices. You also grill these on the grill plate or BBQ until they have nice stripes and are soft.
- We first put the burrata ball in a bowl with flour, then egg and then seasoned breadcrumbs. Do this carefully because you don't want it to tear open. Then carefully in the fryer. It can tear open so be careful, stay with it and take it out right away if it starts to leak!
- Make a bowl with the lettuce, the grilled aubergine and add the grilled fruit. The fried ball in the middle and finish with the seeds.
