- Cut the bell pepper into cubes, I bought the pumpkin already pre-cut in the supermarket.
- Take a frying pan and add a little olive oil in it. Bake the pumpkin with the bell pepper for about 10 minutes. Then add the turkey and fry until cooked.
- In another small pan, toast the pistachios and then chop them finely.
- Place the spinach on the plate and the lettuce on top.
- Scoop the turkey-vegetable mix from the frying pan onto the lettuce and garnish with the pistachios.
