What exactly is that mussel? It is a bivalve mollusk. There are both freshwater and saltwater mussels. The mussel sticks because it needs attachment. Otherwise he would just keep rolling on the bottom. The fact that it is a “filter feeder” is also super handy. They only have to open their house and through the water that flows in they filter the food out.

- 300 gram boiled mussels - (only the meat)
- 4 vegetable wraps
- 1 avocado
- 1 handful spinach
- 1 bag salad mix carrot/onion/cabbage
- sunflower oil (or deep fryer)
For the sauce you will need:
From the pantry for the crispy mussels
- bread-crumbs
- flower
- 2 eggs
- 1 bag mussel herbs
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Prepare three bowls. Put the eggs in 1 bowl and beat them. Put a layer of flour and a layer of breadcrumbs in the other two containers. Season the breadcrumbs with the sachet of mussel herbs.
- Pat the mussels dry and dip them first in the flour, then in the egg and finally in the breadcrumbs. Place them on a platter until ready to use.
- Heat a layer of sunflower oil in a pan or turn on your deep fryer at 180 degrees. Fry the mussels in batches. So don't put everything in the pan at once. Remove them with a slotted spoon when they are a nice golden brown and drain on a kitchen paper.
- Crush the garlic clove into a small bowl and add the rest of the sauce ingredients. Beat into a sauce. (fresh parsley, chives, salt and pepper to taste)
- Fill the vegetable wrap first with some spinach leaves, salad mix and some pieces of sliced avocado, drip some sauce on it, then the fried mussels and then some sauce.
