The easiest way to learn to eat mussels is to fry them! Opinions are divided about whether you should actually do this with mussels, but I'm a fan. Of course, regular boiled mussels are also very tasty. Just not everyone is a fan of it. These fried mussels with garlic sauce are therefore a nice intermediate step. We season both the panko and the sauce with my own spice mix. If you just don't have that coincidence at home, you can also use a mussel-spice mix. fried mussels healthy recipe
I would wait for this recipe until the bottom-cultured mussels are available. These are just a bit bigger and thicker and that makes it a thicker snack. Breading is a small job, but nice to do on the weekend. Then you can relax a bit and then enjoy with, for example, a glass of wine.
Fried mussels with garlic sauce
Making fried mussels is therefore not complicated. You do need to set aside some time for it though. I chose panko in this recipe, if you don't have it at home, you can just use breadcrumbs. And as you can see in the recipe card, I made the sauce myself for these fried mussels with garlic sauce. That is definitely a must to do. Much more flavour, nice and fresh and best to keep in your fridge for a few days.

Ingredients:
- 2 kg Zeeland mussels
- 200 gram panko
- 2 eggs
- 100 gram flower
- 3 el Persillade (spice mix)
- ½ ltr peanut oil
For the garlic sauce:
- 4 el mayonnaise
- 4 el low-fat yogurt
- 1 el Persillade (spice mix)
- 2 cloves of garlic - squeezed
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Clean the mussels, discard the broken ones.
- Place the mussels in a large pan and turn the heat up high! Cook the mussels for 5 to 6 minutes.
- Shake them in a colander and remove the mussels from their shells. Throw away the ones that aren't open.
- Mix all the ingredients for the sauce and refrigerate until ready to use.
- Prepare the three bowls and fill the first with the flour, the second with the two eggs (beaten) and the last with the panko that you mix with the persillade.
- Dip the mussels in the flour, egg and panko and place them on a plate until you are completely done with all the mussels.
- Heat the oil in a pan and fry all the mussels three to four times. Don't put too much in the pan at once! Scoop them out with a slotted spoon and drain briefly on a paper towel.
- Serve with the garlic sauce.
