Grilled aubergines from the oven today. Salsa, yes you can dance it but I prefer to eat it! And the people who have been following me for a while know that I am not a big fan of spicy food. Still, lately I've been experimenting with adding some red pepper. And we see that right away in the title of this recipe: grilled eggplant with spicy salsa. Yes, I finely chopped an, ok small, red pepper and added it to the salsa. Which you could also use for completely different recipes, or delicious with tortilla chips, for example.
We're getting off topic a bit, but I wanted to tell you about these beautiful eggplants I bought the other day. They had such a beautiful graffiti exterior, with alternating white and purple stripes. It looked like they had been painted by an artist. Unfortunately, you don't see much of that once they're grilled in the oven. They lose their color and become soft and brown. But that doesn't matter for the taste, because they are still delicious and juicy. They have a slightly bitter and smoky flavor that goes well with many dishes.

Eggplants therefore remain a bit of a disadvantaged vegetable. I've written about this before. Yet when I look around me, I see few other food bloggers making recipes like these grilled aubergines from the oven. Such a pity! The first day we ate this it was just warm from the oven. The second day we ate the remaining part as a salad at a bbq. And then I suddenly thought hey, we can also grill the slices briefly on the bbq! And I can tell you that it certainly tasted very good.
All in all a nice basic eggplant recipe. If you have a lot left over, you can also puree it and supplement it with diced tomatoes and some puree and make a nice pasta sauce. So you see, you can go in many directions with these aubergines! Enjoy the grilled eggplants with spicy salsa.

And this is how you make it:
- Cut the aubergines into slices, not too thick. Sprinkle salt on both sides and place on a baking tray lined with baking paper. Leave them for half an hour. Then blot them and drizzle olive oil over them. On both sides. Place in the oven at 200 degrees and bake for 10 minutes. Then turn and again for 10 minutes on the other side.
- Meanwhile we make the salsa. Finely chop all vegetables, chop the onion and garlic. Take a frying pan and heat it, pour in about 100 ml of olive oil and then add all the ingredients to the pan. Fry for 10 minutes or so on medium heat.
- When the aubergines have turned, spoon the salsa on the aubergine slices during the last 3 minutes and let it heat up in the oven for a while.
- Put everything on a plate and serve with tasty fresh herbs.
