-We first preheat the oven to 200 degrees.
Season your chicken breasts to your liking and place them in a heavy-bottomed frying pan. Brown them on high heat on both sides. Then turn the heat to low and add a little water. Put a lid on the pan and let them simmer until the vegetables are ready from the oven.
-Take a baking tin and place a sheet of baking paper on it. First place the asparagus and mushrooms on top and drizzle with some olive oil and balsamic vinegar. Mix it all together so that all the vegetables have a layer of the oil and balsamic vinegar around. Sprinkle some fresh black pepper over it and put it in the oven for 15 minutes.
-After the 15 minutes, add the sprigs of vine tomatoes and sprinkle some parmesan cheese on top, put in the oven for a few more minutes until the cheese has melted and the tomatoes are hot.
