You need:

St Jacob's shells

Ingredients:

  • 4 scallops with shell - (ask your fishmonger to clean them)
  • 2 mature avocados
  • 1 broken most
  • samphire - 3 to 4 twigs per shell
  • olive oil
  • salt pepper
  • 1 citroen

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • First we make the avocado cream, put the flesh in a food processor and season with salt and pepper and the juice of 1 lemon. Then mix it all into a smooth sauce.
  • Scoop a few spoonfuls into the clean shells.
  • In a small frying pan with some olive oil, briefly (a minute) fry the samphire sprigs and then place them on the avocado cream.
  • Heat your grill pan, pour in a little olive oil. Grill the scallops on both sides for 2 minutes.
  • Cut the eel into small strips.
  • Place the grilled scallops in the shell and decorate with the pieces of eel and serve.
  • Delicious bites.
