An amuse-bouche has been devised to wake up your taste buds. Nowadays you often get it in a restaurant before starting dinner, but actually it was served between courses. And to get our Christmas dinner off to a festive start this year, I made a grilled scallop with avocado cream and most. I sent a whatsapp message to my fishmonger to ask if he could bring me crackling fresh scallops, and of course that was no problem with Ed. So fresh, in fact, that they were still in the shell and he cleaned them live in front of me. I took the shells home to serve the amuse-bouche, because it's a shame to throw them away!
Grilled scallop with avocado cream and eel
You probably know the scallops from the well-known shape of the shell. Oil company Shell also uses that sign. In Christianity, the shell was used by pilgrims who wore it sewn onto their jackets.
They walked to Santiago de Compostella. A funny fact is that in the past, wearing the shell protected you from highwaymen and other thieves because a code of honor prevented them from attacking these pilgrims.
Incidentally, they carry the shell with the lock up, Shell does so with the lock down. In today's kitchen, scallops are still a luxury dish, so they certainly wouldn't look out of place on your Christmas table.
Here you will find the complete recipe with all the ingredients you need. I hope you have fun preparing the dish below.
