Grilled chicken with orange sauce: a tropical party on your plate!

We regularly eat grilled chicken here at home, it is an easy piece of meat that you can make many different recipes with. In this recipe we eat it with one of my favorite pieces of fruit, namely mango! I love the soft texture and sweet taste and in combination with the grilled chicken with orange sauce it is a true tropical party on your plate. The preparation is simple and does not take much time, so you can also make it easy during the week.

And this is how you make the grilled chicken with orange sauce:

-First preheat your oven to 200 degrees

- Then peel the sweet potatoes and chop them into small pieces. Clean the garlic cloves and put them in an oven dish with a little olive oil and pepper together with the potatoes. Grill these for about 30 minutes until they are soft.

Meanwhile, make the orange sauce. Squeeze the 3 oranges for this, you get about 180/200 milliliters of juice. Put this in a saucepan and let the juice reduce to a thick syrup. You should be left with about 40 ml. Then add the 50 grams of butter in cubes and with a whisk you mix it into a nice smooth sauce. Put the sauce on a stew, it must be heated to about 50 degrees and remain.

- Season the chicken for the Grilled chicken with Orange sauce and place these on the grill, turn them halfway through so you get a nice checkered pattern on your chicken breasts.

- Boil the rice. Take a “sticky rice”, because you can put it nicely in a mold. It will then stay nicely on your plate.

-Peel and cut the mango into nice small cubes and also cut the spring onion into fine slices.

- When the rice is ready, drain it. Mix the rice with the sweet potatoes from the oven.

Take a mold and put the rice mix in it. Repeat on all plates. Then add the grilled chicken and pour over some orange sauce with a spoon. Garnish with the mango and spring onion rings. Serve the grilled chicken with orange sauce with a lovely fresh white wine: Delicious bites!
