You need:

Ingredients:

  • 1 Eggplant
  • 4 sprigs of cherry tomatoes
  • 1 ball of burrata
  • 1 bag of broccoli rice
  • 3 tablespoons pomegranate seeds
  • fresh mint

From the pantry:

  • olive oil
  • 3 tablespoons slivered almonds
  • Oriental spice mix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat the oven to 210 degrees.
  • Cut the aubergine into slices of half a centimeter and place them on a baking tray lined with baking paper. Brush them with olive oil on both sides. Sprinkle with the herbs.
    Place in the oven for 15 minutes, the last five minutes add the tomatoes on the twig.
  • Meanwhile, cook the broccoli rice for two minutes. Drain well and place on a large plate.
  • Fry the almond slivers briefly in a frying pan and set aside until use.
  • Remove the aubergine from the oven with the tomatoes and place on the broccoli rice. Dress the plate with the almond shavings, mint, pomegranate seeds, and burrata.
  • Sprinkle some more herbs over the salad and serve.
