I have loved mustard for as long as I can remember. This is how I used to dip my sausages in it, and a thick dollop with my smoked sausage with kale. There are now quite a few recipes on my site, so I am not at all sure whether there was already a fine mustard sauce among them. So let's get started with these meatballs in mustard cheese sauce. The program here still includes making your own mustard. I'm going to do that soon. Logically, you can season the meatballs yourself with your favorite herbs and spices. Maybe you want them a bit spicier, perhaps with an Eastern twist.
You can always vary when seasoning your meat. In addition, it is interesting to try different types of mustard to give the meatballs a unique taste. Experiment with all kinds of herbs and spices to create delicious and surprising variations of meatballs.
And you can also look for that variation with cheese. Parmesan, blue vein, you name it. Just make sure it is a cheese that melts easily in your sauce. Of course we don't want chunks in it. I simply opted for mature grated cheese here.
Moreover, it is important to experiment with different flavors to make your dish even tastier. For example, you can choose a spicy blue-veined cheese or the creamy taste of Parmesan cheese.
It is crucial not to forget to check that the cheese melts properly into the sauce. This small but important step ensures that you will never be disappointed by unwanted hard bits of cheese in your carefully prepared meal. The mature grated cheese I used in this particular dish adds a beautiful richness and delicious savoriness to the sauce.

- 500 gram half and half chopped
- 60 gram bread-crumbs - (5 tablespoons)
- 1 el persillade spice mix
- 1 tl curry powder
- peper
- salt
- 500 gram pasta
- 4 twigs Parsley - finely chopped
For the sauce:
- 500 ml whipped cream
- 75 gram grated cheese
- 2 el flower
- 75 ml water - (or a little more)
- 1 tl French mustard
- 1 tl mustard
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Place the minced meat with the breadcrumbs, egg, persillade, curry powder and some salt and pepper in a bowl and knead with your hands until everything is well mixed. Roll balls the size of a golf ball with it. Place on a plate and put it in the refrigerator for half an hour.
- Heat a frying pan and add some shortening (e.g. croma) and fry the balls until golden brown on all sides. Remove the balls from the pan with a slotted spoon and set them aside.
- Sprinkle the flour into the fat in the pan and fry it for a minute or 2 while stirring. Add both types of mustard and pour in the whipped cream. Keep stirring!
- Put the balls back in the pan with the sauce and add the water and the grated cheese. Let everything simmer gently over low heat while you cook your pasta. (If your sauce is too thick for your liking, add some water).
- Chop the parsley finely, drain the pasta and spoon onto plates or bowls.
- Spoon the balls with the sauce onto the pasta and serve!

Base is fine. Needs some attention. Flour is really not necessary, it becomes much too thick. Mustard could be a bit more, taste is dominated by parmesan. Otherwise tasty
