Here I have another very easy and super tasty dish for you. We grill the vegetables in the oven and with a blender you can make a fine sauce in no time. We use pumpkin and you can basically use any type of pumpkin for this. I often choose the bottle gourd. I then peel this, but you don't necessarily have to do that. Just wash it thoroughly under the tap. These meatballs with pumpkin orzo are again easy to "prep" when you are alone.

I used minced beef for these meatballs with pumpkin orzo. If you use half and half, the balls will be slightly fatter. You can also use minced chicken. It just depends on what you like best. Would you like the pumpkin sauce to be a little spicier? Then roast a red pepper in the oven.

Because we make the sauce ourselves, we eat extra vegetables and no other added junk. Which of course only has advantages and we also determine the taste ourselves. If necessary, add fresh herbs such as thyme or tarragon to give the sauce even more flavor. What is also great about homemade sauce is that we can adjust it exactly to our preferences. Maybe we like a spicy kick today, then we simply add some chili.

Or we fancy a creamy texture, then we stir in some fresh cream. The possibilities are endless, and by experimenting ourselves we discover new flavours that continue to surprise us. In addition, we contribute to our health by the abundance of vegetables and the avoidance of unnecessary additives. It is not only a meal, but also an adventure in the kitchen that we happily embark on.

Ingredients:
- 300 gram pumpkin - in cubes
- 1 Red pepper - coarsely chopped
- 2 cloves Garlic - chopped
- 1 white onion - rudely sent
- 3 spring onions - cut into rings
- 2 twigs Parsley - finely chopped
- 250 gram barley
- 500 gram minced beef
- 1 ei
- 3 el panel flour
- 2 el minced spice mix

And this is how you make it:
- Preheat your oven to 200 degrees.
- Chop the onion, garlic, pumpkin, and red pepper and place on a baking tray lined with baking paper. Sprinkle with salt and pepper and some olive oil and place in the oven for 35/40 minutes.
- In a mixing bowl, break the egg and add the breadcrumbs, minced meat and the spice mix. Knead it well and then roll it into balls, about the size of a golf ball.
- Fry the meatballs in a frying pan.
- Boil the orzo and let it drain in a colander.
- Remove the vegetables from the oven and add them to a blender with 100 ml of water. Turn until you have a nice smooth sauce and mix it with the orzo.
- Spoon the orzo into the bowls and add some balls. Sprinkle some parsley and spring onion on top and serve.
