Time for the main course! This time we choose a beautiful duck breast that we will bake fillet. Perhaps not everyone's first choice, but certainly no less tasty. Especially with the fantastic caramel gravy that we make on the side, to lick your plate with your tongue…. This caramelized duck breast with tarte tatin is fairly easy to prepare if you've already prepared the rest of the menu. However, you can also bake the meat in advance and then cooperate in the oven when you bake the apples.

When it comes to cooking duck breast, my firm advice is not to cook it completely, but to serve the meat nice and lightly pink. There is a common misconception that meat should always be fully cooked in the hope of making it juicier, but the result is often the opposite. This is a culinary sin, for my taste. By leaving the meat slightly pink, the true taste of the duck comes into its own.

A delicious alternative to serve with this dish, for the sauerkraut in the apples, is the red cabbage prepared with a touch of cinnamon. This combination produces an exotic, sweet and warm aroma that goes wonderfully with the juicy duck breast. So, experiment and enjoy the rich palette of flavors!

So you bake the duck breasts in caramel… hummmmm so good.

Ingredients:

The duck breast with gravy:

  • 4 duck breasts
  • 60 ml balsamic vinegar
  • 40 ml Red wine
  • 300 ml veal gravy - (or demi-glace)
  • peper
  • salt

For the apple tarte tatin:

  • 4 Elstar apples
  • 150 gram sauerkraut - leaked
  • 4 star anise
  • 4 slices puff pastry - cut into a circle

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • We first make the caramel and you do it like this: Place the spices in the weighed amount of water in a pan.
  • In another pan, let the 500 grams of sugar with a little bit of water color on medium heat until hazelnut brown. Then deglaze with the 200 ml water with spices in it.
  • Boil for 2-3 minutes, then strain and let cool.

Preparing the duck breast:

  • In a suitable frying pan 24 cm scoop a generous spoonful of caramel (until the entire bottom is covered with a thin layer). Heat this over high heat and place the duck breasts in this with the fat side in the caramel and start to fry the duck in the caramel.
  • Move the duck breasts constantly through the caramel, checking that it does not burn. When the fat side is nicely caramelized, reduce the heat to low and fry the flesh side for about 3 minutes.
  • Then place the duck breasts in a suitable baking dish with the fat side up. Sprinkle the caramel fat side with smoked sea salt. Now let it rest.
  • Deglaze the caramel in the frying pan with balsamic vinegar and the red wine and reduce it slightly, then add the gravy and bring to the boil. Then pass through a sieve and put in a sauce pan. 
  • You can let the duck breasts cool completely and add them with the apple tarte tatin in the last 5 minutes of the baking time in the oven.  

The apple-sauerkraut tarte tatin:

  • Finely chop the pieces of apple that you scooped out without pits and mix with the sauerkraut, a spoonful of spice-caramel and 1 tablespoon of olive oil, fill the apples with this and cover it with a slice of puff pastry.  
  • Then turn the apple over and press the star anise in the closed side. Now you take a round baking tin and fill it with the caramel and the butter and put the apples with the star anise down in it. Bake them for 15 minutes at 190 degrees.
  • Preheat the plates briefly in the oven.
  • Cut the duck breasts through the middle and place 1 apple per plate, pour some gravy on the plate and serve.
  • Delicious bites!
