Caramelized red onion and fresh fig salad
What is that pancetta in this fig recipe? It is pork belly that is air-dried for three months. Then sliced thin. The meat is seasoned with various spices such as cinnamon, nutmeg, and cloves, salt and pepper. You can eat it raw or baked and the latter is my favorite. It will be super crispy and tasty. And that salty crispy sensation in this caramelized red onion and fresh fig salad is heavenly.
I also chose red onion because it has a more powerful taste than the regular white onion. And the deep warm purple color fits perfectly in this beautiful autumnal still life. We fry the figs briefly in the fat of the pancetta and they become nice and soft. You can just eat the peel.

Ingredients:
- 3 Red onions
- 5 offering - boiled (small)
- 1 burrata ball
- 1 pack of pancetta
- 1 zak mixed salad
- 4 fresh figs
- basil leaves
Nice and easy: click on the logo of your favorite supermarket to add the ingredients.
And this is how you make it:
- Cut the red onions into strips. Take the frying pan and heat it. Add some olive oil and fry the onions until translucent. Deglaze with a dash of balsamic vinegar and let the onions caramelize over low heat for 10 to 15 minutes. Remove them from the pan and leave them in a bowl until ready to use.
- Fry the pancetta crispy in the frying pan, this goes quite quickly. Drain on a kitchen paper. Briefly fry the figs in the fat. (You cut this into quarters.)
- Take the bowl and put the lettuce on it first, then the onions and finish with the pancetta, beetroot, burrata and fresh basil. Sprinkle some pepper over the salad.
