When I'm at the wholesaler, I always walk past the vegetable section because you often find just a little bit more beautiful vegetables here. For example, tomatoes in all kinds of colors, they're called saveurs d'antan, and also coeur de boeuf, those beautifully shaped "flower" tomatoes. With that you have a beautiful color palette for this colored tomato cottage cheese sheet cake. Besides the fact that you only need very few ingredients for this cake, it's also ready quickly. By the way, many supermarkets now also have these tomatoes, or otherwise your greengrocer. I once got to know these tomatoes in France and I've been a fan ever since.

The cottage cheese is a bit crumbly, you could also put it through your food processor or blender for a slightly creamier substance. Add some lemon zest and possibly some herbs and you get a completely different taste. You can also use ricotta for this, which also spreads nicely. You really need to let the tomatoes drain on a paper towel. Otherwise the dough will become very soggy during baking, because the tomatoes will then release their moisture.

- 1 role puff pastry - fresh food supermarket
- 5 tomatoes - various colours
- 2 twigs Parsley - finely chopped
- 150 gram cottage cheese
- peper
- salt
- chili flakes

And this is how you make it:
- Preheat the oven to 200 degrees and line a baking tin with baking paper.
- Roll out the puff pastry on the baking paper. Prick holes in the bottom with a fork (except the edges) to prevent rising
- Stir the cottage cheese well and spread over the puff pastry.
- Cut the tomatoes into slices. Let the sliced tomatoes drain well on kitchen paper to prevent a soggy bottom
- Then divide the sliced tomatoes over the cottage cheese and sprinkle with some pepper and chili flakes.
- Bake the sheet cake in the oven for about 25 minutes until the edge is nice and golden brown. Now sprinkle with the parsley and salt to taste.
