Who cuts the meat on Sunday? Well, how about me? And I even made it myself. A perfectly seasoned roast beef from the oven that is beautifully pink on the inside. Actually, we can't really call it a recipe, more of a manual for baking this roast beef. I would definitely check whether your butcher has it in stock, or otherwise get it from the wholesaler. If there is any left, you can slice it nice and thin and use it to top your sandwich. Of course, temperature is very important when preparing this piece of meat, that guarantees that beautiful pink inside.

For this roast beef I have the herbs from my herb supplier. They have a very nice roast steak mix, but you can use different types of rubs or spice mixes for it. Let the roast beef come to room temperature before you bake it. Otherwise you get a lot of temperature difference in the meat and that does not benefit the baking.

You need:

meat thermometer

Ingredients:

  • 750 gram Roast beef
  • 4 el olive oil
  • 60 gram shortening - (chroma)
  • 3 el steak spice mix

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Preheat the oven to 180 degrees.
  • Make sure your meat is at room temperature and spoon the spice mix over it and massage the meat well with it all over.
  • Heat a frying pan and add the oil and the baking fat and fry the roast beef until nicely browned. Put it in an oven dish and put it in the oven. Lower the temperature to 150 degrees.
  • The baking time can of course vary greatly per oven, you want the core temperature of the meat to be around 52 degrees. So use your thermometer for this! For me it took about 40 minutes.
  • Then let your meat rest for at least 10 minutes on a cutting board covered with a piece of foil before cutting it!
  • Delicious bites!

    If you were to bake the roast beef in the airfryer, would you still use 150gr? And 40 min? Or shorter? Measuring is knowing. But an indication is nice. Thanks!

    1. Hi, well you actually answered your own question haha…. measuring is knowing! I have never used an airfryer for that myself, so I would just test it! First heat it up at 180 degrees and then bake it slowly at 150. And measure it regularly. When the core temperature is 51 degrees it is ready to rest. Will you let me know how it turned out?
