Do you also love blackberries? Here in the garden they grow in abundance, and nowadays you can buy them all year round. They are of course the best when they are in season. Nice and fresh picking and then making beautiful recipes with it. And these delicious fruits are therefore great to use in a recipe with meat and cheese. Since last year we even have two blackberry bushes in the garden. marinated chicken from the oven with vegetables
And they immediately give a mega amount of blackberries this year. Not bothered by the hot weather like some other fruit bushes and trees in my garden. Now get started with this marinated kip with baked goat cheese.

Marinated chicken with baked goat cheese is a simple and tasty dish that you can put on the table in no time. All you need is chicken breast, goat cheese, honey, mustard, thyme, rosemary, olive oil, salt and pepper.

We'll start with the marinade first. Put all the ingredients for the marinade in a bowl and mash the blackberries with a fork. Stir well to make a nice sauce. cut the chicken breasts into small strips and place them in the marinade. (You can marinate the chicken the day before.)
- Then wash the purslane well and put it together with the sliced beetroot in a bowl and toss together, put away in the fridge until use.
Baking the goat cheeses:
-Then take the goat cheese roll and cut off a number of slices here, I assumed three slices of pp. Prepare a bowl with flour, beaten egg and breadcrumbs on your counter. Then dip the cheese slices first in the flour, then in the egg and finally in the breadcrumbs. Put a good dash of olive oil in a frying pan and fry the cheeses on both sides until golden brown. Place in your oven on keep warm setting to keep them nice and warm until you serve them. (My oven is then at 70 degrees).
Baking the Naan:

-Now it's time to bake the naan. Place all ingredients in a bowl and mix to form a ball. This one can feel a little tacky. I have put a good amount of herbs in it myself so that you get a nice spiced sandwich. Put some olive oil on your work surface or on a piece of baking paper and place the dough on it. Divide into two pieces and press the bread into the desired shape. Spread some olive oil on the dough to make it easier to shape the dough and prevent it from sticking to your fingers. Bake the naan in a griddle pan for 2 to 3 minutes on each side. Then place the naan in the oven to keep it warm.
Grilling the chicken:
Finally, we grill the chicken pieces on a grill plate or in a grill pan. The chicken gets a nice color because they have been in the blackberry marinade. If you want to be sure that your chicken is cooked, cut open a piece to see if they are cooked.

Finally, we season the purslane salad with some olive oil and balsamic vinegar, salt and pepper. Grab your plate or, like me, planks and place the naan on it first. Then the salad and finally the chicken, fresh blackberries, and goat cheese marinated chicken with vegetables from the oven
