As I write the title of this recipe I just know that a lot of people will be scratching their heads. Scarmoza wadding? What did you use for an ingredient again? Italian cuisine is also very close to my heart. Or rather to the stomach and taste buds actually. We are going to work with scamorza affumicata, a smoked cheese from Italy. It is a firm cheese that is made in almost the same way as mozzarella. The cheese matures in its own whey.

A scamorza affumicata is a smoked cheese that has the shape of a pear-shaped ball. When you remove the packaging, a smoky smell is immediately released. I really liked this cheese in combination with the pasta salad, because the smoke flavor was not too strong. I want to make another recipe with scamorza affumicata soon, because I think that many people in the Netherlands do not know this cheese yet. That's a shame, because it's a nice variation on the well-known mozzarella cheese.

By the way, the cheese is a "hard" cheese. Not to be compared with those mozzarella's in moisture that you buy in the plastic bags or containers in the supermarket. You probably won't find this cheese in your supermarket either. I ordered it myself online at Crisp, which is a shopping service. They often have nice and special products.

You need:

Ingredients:

  • 1 smoked scamorza - (Crisp.nl)
  • 300 gram macaroni - cooked
  • 3 eggs
  • 1 bunch of broccoli
  • 2 Red onions
  • 100 gram cashew nuts
  • 1 call

For the dressing:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Boil the maccheroni, drain and return to the pan with a dash of olive oil so they don't stick together.
  • Boil the eggs and then cut them into pieces.
  • Break the broccoli into small florets. (You can store the stump in the freezer for a soup, for example).
  • Chop the red onions, cut the apple into cubes, and also finely chop the scamorza.
  • For the photo I first put everything on a plate in 8-8 parts. But in your case I would just mix everything in a bowl at once.
  • Take a measuring cup and whisk in all the ingredients and the fine dressing. Drizzle this over the salad.
  • Delicious bites!
For the cheese it is best to go to a cheese shop, or order it online. You usually do not buy this in a supermarket.
