By now we can call the sweet potato well established because it is even sold in my neighborhood supermarket here in the village. Well, it is not the case that he is immediately on the menu here every week, but every now and then he appears on the scene. This recipe actually came about because I had a large pan of chili left over. You don't throw those away, of course, and in the fridge were three avocados that I wasn't quite sure if I cut them open whether they would still be green. And luckily they turned out to be! I turned it into a delicious avocado cream to use as a dressing with this baked sweet potato with chili. We ate some of these potatoes together for dinner, but they wouldn't look out of place at a tex-mex party with some tortilla chips and a nice salsa.

I wouldn’t go so far as to say that a sweet potato is significantly healthier than a regular potato. It certainly doesn’t belong in the same category, since it’s a vegetable. However, it is a particularly tasty vegetable that has been around for thousands of years. Today, the sweet potato can be found all over the world and is high on the list of the most important food crops. There are varieties such as the pink and the orange, with the orange variety, as you might expect, containing more beta-carotene.

Ingredients:
- 5 sweet potatoes - (little ones)
- 2 avocados
- 1 citroen
- Chili con carne - (leftover from the freezer)

And this is how you make it:
- Preheat the oven to 200 degrees.
- Prick the potatoes with a knife and place them on a piece of baking paper on a baking tray. Place in the oven for about 40 minutes until completely soft.
- In the meantime we make the avocado cream. Cut the avocados in half and scoop out the flesh. Place in a blender with the juice of the lemon. Blend to a smooth dressing. (add some water if it is too thick)
- Heat the chili in a pan. (The recipe for this can be found on my website)
- Once the potatoes are done, take them out of the oven and carefully cut them open. Spoon in the chili and garnish with the avocado dressing.
