Baked sweet chili potato
In the summer I like to puff potatoes on the barbeque. Super easy because you just have to put them on the fire and wait. Add a nice sauce and enjoy. In the winter the bbq is turned on a little less often and I sometimes pop them in the oven. This puffed sweet chili potato is super tasty! Sort of chilli con carne served on a sweet potato. Originally South American, so the taste of the potato goes very well with the Mexican influence of the chili. baked oven baked sweet potato recipe
And this is how you make it:
-First take the sweet potatoes and scrub them gently. Then pierce the whole potato with a fork. Grab some olive oil and brush the potatoes with it. Then wrap them with some aluminum foil and close them well. Place them in a preheated oven at 200 degrees for about an hour. If you can easily pierce them with the tip of a knife, they are done.
-In the meantime, we'll continue with the mincemeat. Take a frying pan and stir in the minced chicken. Season it with the Mexican spice mix. Then set aside.
-In the same frying pan, scoop the jar of chili beans. I bought a jar that also contains some extra vegetables. Heat the beans on low heat and let them simmer for a while.
When the potatoes are ready, take them out of the oven and carefully remove the aluminum foil. Take a shovel knife and cut them open.
-Take the plates and put the potatoes on them, first fill the potato with some of the minced meat. Then spoon some of the chili beans on top and finally two nice dollops of sour cream.

Before serving the plates, sprinkle some spring onions and tortilla chips over the potato. Delicious with a Mexican beer.
