Ingredients:
- ½ bottle gourd - peeled and cubed
- 2 twigs thyme
- 100 gram walnuts - chopped into pieces
- 1 el sesame seeds
- olive oil
- 1 el baharat spice mix
For the dressing:
- 3 el mayonnaise
- 3 el yoghurt
- 2 el lemon juice
- peper
- salt
- 1 tl baharat spice mix
- 2 el tahini - sesame seed paste

And this is how you make it:
- Peel the pumpkin and cut into cubes.
- Preheat your oven to 220 degrees.
- Line a baking tray with baking paper, place the pumpkin cubes on it and pour some olive oil over the pumpkin. Sprinkle with the baharat spice mix and toss well. Sprinkle some salt on top and bake for 30 to 35 minutes until the pumpkin is browning around the edges.
- Meanwhile, make the dressing by placing all ingredients in a measuring cup and whisking well with a whisk.
- In a frying pan, toast the chopped walnuts, making sure they don't burn.
- Put everything in a bowl and sprinkle with some fresh thyme, the sesame seeds and some dressing.
