The word “naan” means bread. So when someone posts “naan bread” or “naan bread” somewhere, you literally write bread bread. In this recipe, stacked naan toast with avocado cream, I use the naan as toast. So a bread-toast and that while naan is already bread… Maybe I should just say that this is very tasty and don't worry about the grammar or correctness of describing what's on your plate. But a recipe has to have a title, right?

Now you could make the naan from scratch but in this case I just bought it. I have a favorite flavor and it can be found in almost every supermarket.

Of course you could also serve this stacked naan toast with avocado cream "normal". I made some extra effort by using a prong ring. Because of this everything fit exactly in the circle and that's how I fried the eggs. You can also simply cover the naan with the avocado cream and serve it whole.

The mushrooms have a wonderful taste by baking them with a little soy sauce.

The mushrooms have some extra flavor by frying them and adding a dash of soy sauce at the end. Of course I also have my own persillade mix used to give some extra flavor to this delicious toast.

Use a cutting ring to ensure that the egg stays nicely round.

Ingredients:

  • 2 spiced naan - ( out of packaging )
  • 1 large beef tomatoes
  • 300 gram spinach
  • 10 champignons
  • 2 eggs
  • 1 avocado
  • 1 citroen

From the pantry:

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the mushrooms into slices. The beef tomato too, we only need two thick slices of this.
  • In a bowl, mash the avocado with the juice of half a lemon, season with salt and pepper. This can also be done in a small kitchen machine, then you can really turn it into a delicious cream.
  • Fry the spinach in a frying pan with a little olive oil until it has wilted. Set aside until use. Then fry the mushrooms and add a little soy sauce at the end.
  • Cut a circle out of the naan's with the cutting ring. You get two rounds from one naan.
  • Then fry the eggs in another frying pan with the cutting rings. (I have steel rings that can handle that heat).
  • Toast the naan briefly in the oven or on a toaster and then spread with avocado cream. Build the tower in this way and cover it with the fried egg.
