I was recently in Amsterdam and we had a delicious “mezze lunch” for lunch. A table full of delicious snacks, including hummus, papadum, naan, and also grilled vegetables. The only thing I remembered about the vegetable was eggplant, so I started working on this stewed eggplant with sumac mezze at home. Delicious as an addition to your mezze meal with other delicious dishes. Such as feta, hummus and olives.

You need:

Ingredients:

  • 2 eggplant - cut into strips
  • 1 big onion - in half rings
  • 200 gram grilled bell pepper - from jar
  • 2 toes Garlic - finely chopped
  • 3 twigs Parsley - finely chopped
  • olive oil
  • salt
  • peper
  • 1 tl sumac

Nice and easy: click on the logo of your favorite supermarket to add the ingredients.

And this is how you make it:

  • Cut the vegetables, chop the garlic and parsley.
  • Heat the pan and pour in a little olive oil, fry the garlic and onion until translucent and then add the eggplant and grilled pepper. Season with the sumac, pepper and salt.
  • Mix everything well and reduce the heat and let it simmer for 20 minutes with the lid on the pan.
  • Finish the stew with the fresh parsley and serve, delicious bites!
