A typical Provencal dish is a stuffed zucchini. In France you can already buy them ready-made at the meat department. That's because they are already filled with nicely seasoned minced meat. But creative as I am, I made them myself of course. Stuffed zucchini on the bbq. And of course you can too! If you want a vegetarian version, you will have to make it without minced meat, of course. This is how you make the stuffed zucchini with minced meat and chicory:
-First cut off the top of the zucchini bulbs and save the tops, then carefully spoon them out with a teaspoon until a nice hollow is formed.
- Chop the garlic clove and the shallot and cut the tomato and green olives into small pieces. Fry this briefly in a frying pan and then set them aside on a plate, and then crumble the minced meat. Once it is brown, add the ingredients on the plate and mix well.
- Boil the courgettes in a large pan with water for about 5 minutes until they are a bit soft and then carefully scoop them out, let them drain for a while, then fill them with the minced meat mixture and set them aside.
- Cut the endive stalks in half and rub them with olive oil and then sprinkle some salt on them. Then you put them on the bbq for about 10/15 minutes until they are cooked.
While you are grilling the chicory, you can carefully place the zucchini balls on the side of your grid so that they stay nice and warm and get a nice smokey taste from the bbq.

- Take a nice plate and put a zucchini ball on it and 2 chicory stumps. Then place the St Agur cheese on the chicory stumps and garnish with some arugula. Stuffed round zucchini on the bbq.
